Hey, everyone! I hope all is well with you and your families!

My holidays were spent in bed. I got sick on Christmas Eve and I’m still not 100 percent. I wouldn’t wish all this sickness on anyone. The bad thing was I had my flu shot two weeks earlier and got sick anyway. That was a first for me.

I hope you all had fun and well enough to enjoy the festivities.

I was saddened by the deaths of family members, my friends, neighbors, and fellow church members. We should keep each other in prayer daily.

I don’t know if you all got all the lines to the poem I wrote. It was in the tip of the week to change things up a bit. I am going to put it all together for you this week. That way you will have the whole thing together in one place. Here it goes:

One Silent Night,

A star shined bright!

The Shepherds came,

And Jesus was his name.

The Wise Men traveled afar!

And came East, following the star.

The Angels sang a heavenly song,

Glory to God who sits on his throne!

If you don’t have Jesus, in your heart!

When time comes, you’ll have to part.

I hope and pray that all of you will have a blessed and prosperous year. We can only take one day at a time and do our best to make each day count.

1cup flour

½ cup corn meal

1 tsp. baking powder

½ tsp. salt

¼ cup shortening

½ cup milk

Mix flour, corn meal, baking powder and salt. With pastry blender or two knives, cut in shortening until mixture resembles coarse crumbs. Add milk, mixing until dough can be formed into ball. Place dough on greased baking stone or pizza pan. Press and pat firmly and evenly onto bake pan. Form a ridge around the edge. Place pan in oven and bake 8-10 minutes at 425 degrees or until crust is crisp and browned on bottom. Spread meat filling over crust. Cover and bake 3 minutes. Transfer taco pie to cutting board or platter. Top with toppings listed.


Follow recipe for meat filling or use 1 pkg. (1 ¼ oz.) taco seasoning mix. Follow pkg. directions.

1 lb. ground beef

1/3 cup minced onion

2 tsp. paprika

½-1 tsp. ground cumin

½ tsp. salt

½ tsp. garlic salt

¼ tsp. Tabasco or Texas Pete

1 tbsp. hot taco sauce or green or red chili pepper sauce.

¾ cup water

Brown ground beef and onion in fry pan. Stir frequently to break lumps. Add remaining ingredients. Simmer uncovered over low heat stirring occasionally.


1 ½-2 cups shredded cheddar cheese

1 ½-2 cups shredded lettuce

1cup refried beans

¾-1 cup chopped tomatoes

1/3 cup chopped green peppers

¼ cup chopped onion

¼ chopped ripe olives
