Hello, folks! I hope your week went well! My week was okay, however, I wasn’t worth shooting a few days before week’s end! I am still not up to par since my bout with the flu. I hope there are those of you who have not had it, I pray you don’t. It is awful and leaves you feeling week and useless.

I am going to tell you some Jan and Brenda Stories. I have sat and laughed at the ones I am going to tell you about. The Rose Center used to have a radio program on Saturday Nights. I went to Brenda’s house to pick up her Amanda, one Saturday afternoon late. My Amanda and her Amanda was going with me.

We had a favorite Chinese restaurant in Morristown called China Palace. It was over on Morris Boulevard. The food was fabulous.

As we were backing out of the driveway at Brenda’s house, her brother Bobby, his wife, Robin, and son, Michael, were pulling in. I didn’t see them and his front end and my back end of our Hyundai’s collided.

I got out of the car and was in hysterics. I kept apologizing to Bobby as we both got out of our cars. He was trying to calm me down and was asking if I was all right. I asked Bobby if he was all right. He said he was.

Michael was in the back seat eating fries from McDonald’s. I think he also had a burger and drink. The French fries flew all over Michael and Robin was sitting in the front passenger seat and wasn’t saying a word. I think she was in total shock.

After all of the excitement, the girls and I went on to Morristown. I finally calmed down when we started eating. We went on to the Rose Center and performed. The next day Amanda, Michael and Candy sang at the K-mart on Highway 66, back in Rogersville. Bobby and Robin came, I was there and Brenda came.

Robin looked at me with a serious look. She never said a word and just fell over laughing. I believe she had a little bit of a delayed reaction. We all got tickled and had a good laugh.

The next one I just thought about it this past Tuesday. I wanted to share it. It is “The Unusual Ornament on the Christmas Tree.”

I went to Brenda and Donnie’s for a visit. She had just put up her Christmas tree a day or two before I went by to see them. I sat down at the kitchen table.

We always sat there with coffee in hand and talked our heads off! I looked over at the tree and all the decorations. It was beautiful. I looked over and saw a peculiar ornament. It was a pink princess phone.

I looked over at Brenda and said, “I love your phone ornament.”

She said, “Don’t you though?”

We just fell out laughing! She said the phone started ringing and Donnie tried to get somebody to answer it and no one would. He just picked it up and slung it over in the Christmas tree and Brenda just left it there.

Have mercy, what good times we had. More to come! Good friends are hard to find. I am so glad they were mine.

1¼ cups all-purpose flour

½ cup plus 3 tbsp. brown sugar, packed and divided

½ cup butter

2 eggs

2 tbsp. butter, melted

½ cup light corn syrup

1 tsp. vanilla extract

½ cup chopped pecans

Combine flour with 3 tbsp. brown sugar; cut in ½ cup butter until coarse crumbs form. Press into an 11’’by7’’ baking pan. Bake at 375 degrees for 20 minutes.

While crust is baking, beat eggs in a large bowl and add remaining brown sugar, melted butter, corn syrup and vanilla. Blend in pecans and pour mixture into hot crust. Bake for 15 minutes. Cool and cut into bars. Makes 2 dozen. Fantastic!


To make meringue:

Preheat oven to 375 degree. Beat 3 Egg whites until foamy. Gradually ad 1 cup sugar, beating until stiff.

Spread meringue in a 9x13 lightly buttered Pyrex dish. Put meringue in oven and turn off heat.

Leave overnight, DON’T open oven door during this time.


1st. Layer-1-8oz. carton Cool Whip tinted light green by using 2 or 3 drops green cake coloring. Spread over meringue.

2nd. Layer-1 regular size can Eagle Brand (sweetened condensed milk)

½ cup lemon juice (bottled)

2 egg yolks

¾ tsp. lemon flavoring

Mix milk and egg yolks. Gradually add lemon juice. Add flavoring, Spread over first layer.

3rd. Layer-Spread 8oz. Carton Cool Whip over the lemon layer. Refrigerate at least 3 hours before serving. Yummy!
